Reports to: Roasting and Production Supervisor
In the Tony & Libba Rane Culinary Science Center, there will be a micro coffee roastery where students will be immersed in the process of making artisanal coffee beverages from bean to cup. Roasting, grinding, tamping, pouring, and serving will be just a few of the hands-on learning activities for student training. Hotel guests and local patrons who visit the roastery will taste the quality of Auburn-roasted beans in every cup of handcrafted coffee.
The Production Roaster will execute the day-to-day roasting and production fulfillment needs of The Roastery and collaborate with all coffee outlets in AUHCC, HEY DAY, and AULUA to provide roasted (whole bean or ground) coffee, brewing recipes, cleaning guides, and quality control.
In addition to roasting, the Production Roaster will also work closely with the Roasting Supervisor and Director of Coffee on green purchasing decisions and quality analysis through physical measurements and regular cupping. This position will also be an integral part of the hands-on instruction and learning activities for student training during labs and classes.
Primary Duties
- Roasting
- Fulfilling all roasting needs on a Diedrich IR-12 following a roast schedule created by the Roasting Supervisor.
- Roasting within the profiles and parameters set utilizing Cropster for recording data and logging roasts.
- Regular roaster maintenance and cleaning.
- Fulfill roasted coffee in all coffee outlets within Ithaka Operations including any web-based or off-site fulfillment.
Quality Control
- Brew / Cup coffees for Quality Analysis and measure TDS, Strength, and Extraction Percentage.
- Create and maintain brew recipes and cleaning schedules for coffees brewed at all outlets and off-site.
Other
- Filling, labelling, and sealing retail bags.
Grinding Coffees for fulfillment.
- Packaging for offsite use or shipping.
- Moving materials (coffees, roasting and productions supplies, etc) between outlets and storage spaces throughout the properties.
Secondary Duties
Roasting
- Roasting samples for purchase decisions
- Instruct students during academic hours on the roasting processes.
Quality Control
- Record physical measurements of each green coffee sample and record results in Cropster as well as maintaining a physical sample database.
- Set up, perform, and break down cuppings for QC, education, or instruction as needed.
- Participate in cuppings with the Director of Coffee, Roasting Supervisor and /or Thrive Partnership Director for purchasing decisions and QC.
Other
- Acting as a position representative of the company during industry, Ithaka or university functions.
- Support a collaborative environment through engagement with production team and shop staff on recipes, brew guides, and recipes.
- Actively works to grow coffee knowledge via on-the-job training and personal study.

Working Conditions:
- Inside with protection from weather but not necessarily changes in temperature.
- Roasting produces considerable noise and hearing protection is recommended.
- The workplace is fast paced, with considerable movement throughout the shift.
- Requires standing and walking 95% of the workday.
- Requires lifting and carrying of objects weighing up to 75 pounds.
- Requires moving objects of up to 150lbs.
- Physical activities include walking, talking, standing, stooping, hearing, seeing, talking, bending, reaching, fingering, feeling, touching, writing, grasping, handling, stretching, balancing, pushing, pulling.
Qualifications
- 1 year of professional coffee experience
